蔡認娘（Chua Jim Neo；1907年—1980年8月8日），新加坡闽南裔廚師、食譜作者，著有娘惹飲食食譜《李太食譜》（Mrs. Lee's Cookbook）一書；也是新加坡商人李進坤之妻、新加坡首任總理李光耀之母。
生平
蔡認娘生於1907年，父親是新加坡當地的富商蔡金鼎（Chua Kim Teng）[1]，母親是印尼客家後裔Leong Ah Soon。她的父親雖然在新加坡出生，但她的祖父其實是來自马六甲的闽南民系，祖籍福建漳州海澄[2][3]。她的父母為她安排了與一位名叫李進坤的店主結婚，並在她十五歲時結婚[4]。二人育有四子一女[5]，她的大兒子李光耀後來成為首任新加坡總理[4][6]。蔡認娘為她的家庭存下珠寶和金錢，管理家庭財務並幫助光耀在英國上法學院[4]。
1974年，蔡認娘開始着手編寫《Mrs. Lee's Cookbook: Nonya Recipes and Other Favorite Recipes》一書，使娘惹飲食的傳統得以保存下去，[7][4][8]。娘惹飲食是一種混合了峇峇娘惹的煮食方式與馬來料理的飲食文化。而作為一位峇峇娘惹，蔡認娘被認為是娘惹飲食的權威[9][10]。 最初的版本有她的表親黄金辉寫的序言，當時他是新加坡駐馬來西亞高級專員，後來還出任新加坡的第四任總統[11]。當2003年這本書再版時，她的孫女Lee Shermay更新了書中內容再重新出版[12]。
蔡認娘於1980年8月8日去世，並在翡珑山骨灰安置所火化[5]。她於2015年追授進入新加坡女性名人堂[4]。
